Lessons Learned Baking Pound Cake

I was standing at the foot of a small hill looking up. Again. Iíd run up this climb in the desert before and here I was again visiting my parents in California out for a run. In fact I had been running along just fine for the last couple miles until I looked up at this challenge. All sorts of thoughts went thru my head. Itís going to be hard. Iím going to be tired. It will be hard to breathe. Never once did I think oh wow great I get to challenge myself to become a better runner. Nope it was all negative and the more I thought about it the bigger that hill got in my mind.

Itís not only in running. Public speaking is another event that can become a huge Titanic in my head if I let it. Iíve spoken publically before, Iíve climbed hills before but nevertheless when I have to do it again good old fear drops in for a visit.

Hereís what I have learned.  Over the winter I raced three weekends in a row and by the third time my prerace jitters had changed.  With each successive race I had less fear and felt more self assured. Sometimes I have been out for a run and I have gone so far as to run up a challenging hill twice. Doing something over and over changes you.

Around 20 years ago I ate this fantastic pound cake at a family reunion in Mississippi. The key ingredient is cool whip and you canít find this yummy treat in any store, if you want it you have to bake it. A couple months ago I found the Cool Whip Pound Cake recipe and tried it. The first two times I baked it in a Farberware silicone bundt pan with not so good results. The inside was gooey and we could only eat the outside baked part. I changed pans and now that Iíve baked this cake five times I am confident in my ability to produce this yummy treat. But it took me repeating the process five times.

No I wasnít afraid to bake the pound cake but learning often takes many tries and Iíve found that facing something I fear doesnít reduce my fear until Iíve done it over and over. Sorry one time is not going to fix it. Repeatedly facing your fear will reduce it. Thatís great news because when you face a fear you change inside. No one will see it, but you will feel it. Try it-do it and then do it again.

Cool Whip Pound Cake Recipe

1 cup butter softened
3 cups sugar
3 cups all-purpose flour
6 eggs
1 teaspoon vanilla extract
1 tablespoon lemon extract
8 oz whipped topping

Preheat oven to 325 degrees. Cream together butter and sugar. Sift flour before measuring. Add flour and eggs alternately to batter starting and ending with flour.  Fold in flavorings and whipped topping. Mix only until blended.  Pour batter into greased and floured 10 inch tube pan. Bake for 1 hour and 15 minutes.
